Baked Apple-Cinnamon Oatmeal

Apple oatmeal crumble for breakfast? Why not? For those cozy winter mornings, why not create something warm and comforting. This breakfast take on the apple crumble can be assembled the night before and simply baked in the morning, while the coffee is brewing. The sweet smell of apples and cinnamon will spread over the whole house. Who can resist it?

Baked Apple-Cinnamon Oatmeal

How it's made
Preheat oven to 375°F (190°C)
2 tbsp brown sugar |
Mix in a bowl and set aside. |

2 apples, cut in thin slices |

¼ cup chia seeds |
Mix in another bowl and set aside for 10 minutes to give chia seeds time to form a gel. |

2 cups almond milk |

3 tbsp maple syrup |

2 tbsp peanut butter |

1½ tsp vanilla extract |

1 ½ cups oats |
Mix in a third bowl. Once the chia mixture sets (after 10 minutes has passed) mix it with the oat mixture. |

1 tsp baking powder |

1 tsp cinnamon |

½ lemon peel, zested |

¼ tsp salt |

Grease 8x8 inch casserole dish. Place apples on the bottom of the dish in an even layer. Pour oat/chia mixture on top. Bake for 25-30 minutes. |

1 banana, sliced (optional) |
Once oatmeal is done baking, arrange banana slices on top. |
