Happy St. Patrick’s Day! Do you have any plans for celebrating? Since today is Friday, some of you are probably planning on going out tonight for some Irish music and green beer. I have many pleasant memories of fun times at Irish pubs on this day, a handful of not-so-pleasant ones of the green beer the following morning. Partly because of these memories, and partly because adding food colouring to things doesn’t make for much of a recipe, I’m not writing about green beer today. Instead, I came up with something that isn’t really Irish, but does have the signature green colour, not derived from food coloring: a caramel apple smoothie bowl.

This deliciously creamy smoothie includes ingredients that you might not expect in something that has caramel in the name, but you won’t even notice that avocado and spinach are in there. It was inspired by my childhood favourite fairground treat - caramel apples - only it is much healthier and a less guilt-invoking way to enjoy similar flavours. You can top this smoothie bowl with anything you wish, but I chose to make it a little more filling by adding a banana and some walnuts. If you aren’t planning on going to a pub tonight and celebrating, you can still inject a little bit of the St. Patty’s Day tradition into your day by starting it with this Caramel Apple Smoothie Bowl for breakfast.

Makes one smoothie bowl

How it's made


1 cup almond milk


Place in a blender and blend until smooth (about 1 minute)

1 granny smith apple, cored and roughly diced

1 cup spinach, packed

½ avocado

1 tbsp hemp hearts

½ cup ice


Caramel topping

⅓ cup dates, pitted


Place in a blender and blend until smooth (about 1 minute).

1 tbsp almond butter

1 tbsp almond milk

½ tbsp maple syrup

1 tsp coconut oil

¼ tsp vanilla extract

1/4 tsp sea salt


1 banana


Place the smoothie into a bowl and top with the caramel topping, banana, and walnuts. Enjoy!
