Peanut Butter Rice Crispy Balls

These chewy, crispy, vegan balls of indulgence are likely going to trigger some deep buried memories from your childhood - they sure did for me. If you tend to feel guilty after succumbing to sweets, don’t worry. Your kids will make sure that these treats are gone before you even reach for the second one. They’re allowed. After all, they’re in the process of making childhood rice crispy ball memories of their own.

Peanut Butter Rice Crispy Balls

How it's made
½ cup coconut sugar (or brown sugar) |
Place in a sauce pot and heat over low heat, stirring, until the sugar dissolves. Remove from heat. |

⅔ cup brown rice syrup |

⅔ cup peanut butter (creamy or chunky) |

¾ cup shredded coconut |
Fold into sugar-rice-peanut butter mixture until well mixed. |

½ cup roasted nuts, mixed or one kind, chopped |

2½ cups crispy rice cereal |

Scoop out the mixture, golf ball size at a time, into cupcake papers, pressing it a little to form a ball. |
Helpful tips
I decided to place the balls in medium cupcake papers. Another great way to serve this dessert is to place a cake pop stick in each ball while you’re making them, and let them cool with the stick pointing up. This makes eating this dessert more fun for the kids and young at heart.
