Blueberry Squares

If you are looking for a quick, yet mouthwatering, dessert recipe to use up those summer berries in your fridge, you’ve come to the right place. I make these berry squares A LOT, at any time of the day or night. The craving for sweets seems to appear out of nowhere, and it sends me straight to the pantry trying to see what I can put together to end the craving. It turns out that in those situations I almost always have all of the ingredients to make a batch of berry squares, and in 40 minutes I have a warm treat sitting in front of me.

I don’t know about you, but making a dessert that features a fruit, in my head, seems like a healthier option than any other kind of dessert. I tend to omit the sugar in the filing as I don’t like it too sweet, but if your berries are on the tartier side then adding sugar might not be optional. And if you’re looking to take this dessert to an even higher treat level, top it with a scoop of your favourite vegan ice cream - I won’t tell anyone.

Makes 9 large squares

How it's made

Preheat the oven to 400°F (200°C)


Crumble Mixture (used for crust and topping)

2 cups flour


Place ingredients into a bowl. Using a pastry cutter, or a fork, cut the butter into the flour/sugar/walnuts until crumbly. Pour ½ of the mixture into a 9x9 in baking dish and press down with hands to form a layer of crust. Reserve the second half for the topping.

1 cup coconut or brown sugar

1½ cups vegan butter or margarine, cold, cubed

⅓ cup chopped walnuts



4 cups blueberries, frozen or fresh


Place in a bowl and mix until combined. Pour over the prepared crust.

3 tbsp vanilla custard (or corn starch)

1 lemon zest, grated

½ cup coconut or brown sugar (optional)


Place the remaining half of the crumble mixture over the filling.


⅔ cup chopped walnuts


Sprinkle walnuts on top of the crumble mixture.


Place in the oven and bake for 30 - 35 minutes, until golden on top. Cut into squares and enjoy!

Helpful tips

In case you have any leftovers, they can be placed in the fridge for up to 4 days. You can eat the leftovers cold, or place into the oven at 400°F (200°C) for 10 min, or until heated through.

In case you are not a huge blueberry fan, or just happen to have other berries on hand, you can substitute them in this recipe for an equally delicious treat. We had it with strawberries just the other day, and the whole batch disappeared shortly thereafter.
