Smoked Tofu and Hummus Sandwich

This sandwich is my go-to food to take when going hiking or skiing, as it has enough protein to fuel a day out in the mountains. We almost always have some hummus in the fridge, so putting this together takes almost no time at all. It’s a good dinner option for those extra busy (or lazy) days as well.

How it's made

2 slices of your favourite bread

 

The bread can be toasted, or not, depending on preference.

 

3 tbsp of your favourite hummus (mine is Fiery Garlic Hummus)

 

Divide hummus and spread onto each piece of bread.

 

2 - 4 slices of tomato, depending on the size

 

Arrange on one piece of bread. Once done, close the sandwich with the other piece of bread (hummus side down).

4 slices of smoked tofu

4 red onion rings

½ cup loosely packed spinach

 

2 pickle slices (optional)

 

Serve on the side.

Helpful tips

This sandwich is best when eaten fresh as the bread will go soggy if kept in the fridge.
