These burger cups are a fun way to use up any leftover dough that you might have. They’re like hamburgers with barbecue sauce, only stuffed inside of a bun-cup and topped with your favourite burger toppings. To me they seem like the perfect summer party food for all your vegan guests, don't you agree?

How it's made

Preheat oven to 400°F (200°C)

 

3 cups of water

 

Place in a medium pan and bring to boil over high heat. Once boiled, lower the heat and simmer for 40 minutes. Drain and mash.

1 cup green lentils, mashed

 

½ cup toasted walnuts, chopped

 

To toast walnuts, place them on a dry pan and cook over the medium-high heat until they're fragrant and turn slightly more brown. Make sure to stir and flip walnuts often.

 

Once walnuts are toasted and chopped and the lentils are done cooking, bring them together in a large pan.

 

1 tbsp nutritional yeast

 

Add to the lentil/walnut mixture, and cook all together over medium-high heat for about 7 minutes. Turn off the stove.

1 tsp garlic powder

½ tsp cumin

 

¾ cup ketchup

 

Add to the lentil/walnut mixture and mix well.

3 tbsp brown sugar

2 tbsp chilli sauce (optional)

1½ tbsp mustard

1½ tsp vegan Worcestershire sauce

 

½ Versatile Dough dough recipe

 

Divide the dough into 12 pieces. Lightly oil a muffin pan and stretch each piece of dough so that it covers the bottom and walls of each muffin slot. Fill with lentil/walnut mixture and place in the oven. Bake for 10 minutes (15 minutes, if not using the vegan cheese-alternative).

 

½ cup of your favourite vegan cheese-alternative, shredded (optional)

 

Sprinkle over each cup and return to the oven for 5 more minutes.

 

1 tomato, sliced (optional)

 

Remove the cups from the pan and top each with tomatoes, onions, and green onions (or other desired toppings).

2 green onions, chopped (optional)

½ medium red onion, sliced (optional)

Helpful tips

Cups can be stored in the fridge for up to 3 days, or frozen for up to a month. To reheat from frozen; preheat the oven to 400°F (200°C) and bake cups for 20-30 minutes, or until the center of each cup is heated through. To reheat from the fridge; preheat the oven to 400°F (200°C) and bake for 10 minutes, or until the center of each cup is heated through.
