Adding avocados to salads makes them heartier, and turns a side dish into a full lunch feature. In this salad, the flavour is built by using a tried and true combination of avocado and lime, while the sweetness of tomatoes is added to balance the citrus. To round it all out, it’s topped with roasted walnuts for some crunch and protein - allowing this dish to stand on its own as a full meal if desired.

How it's made

2 cups loosely packed mixed greens

 

Mix and arrange at the bottom of a salad bowl.

2 cups loosely packed arugula

5 medium tomatoes, sliced into wedges

 

Arrange over the greens.

4 green onions, diced

2 avocados, sliced into wedges

½ cup walnuts, toasted and chopped

 

Dressing

2 tbsp vegan mayonnaise

 

Place in a small jar, close the lid tightly, and shake well until the dressing looks smooth. Pour over the salad.

1 tbsp lime juice

1 tbsp fresh parsley

2 tsp Dijon mustard

½ tsp sugar

½ tsp salt

¼ tsp pepper

Helpful tips

This salad should be eaten right away as avocados tend to change color after peeling and cutting, and salad greens wilt. If the presentation of the salad isn’t a concern, it will taste great the following day as well when kept in the fridge.
