I love fruit in my salads. I find that the burst of fresh, juicy sweetness in each bite often brings out a slightly different flavour to whatever else you are eating with the salad. It’s almost a way of making dishes that you eat regularly taste like new again. For someone that likes to experiment with food and look for novel and different flavours, this is a welcome phenomenon.

I like this salad for exactly those reasons. It brings the sweetness and juiciness of papaya to the meal, but it also adds a little earthiness and spice with cumin in the dressing. I wasn’t sure if it would work, but it turns out that papaya and cumin go quite well together. Who knew! Serve it as a side dish, or make it a full meal. After all, who wants to turn on the stove or the oven during these scorching summer days.

How it's made

Dressing

 

1 garlic clove, minced

 

Place in a bowl and whisk until combined. Alternatively; place in a small jar, close the lid, and shake until combined.

4 tbsp olive oil

1 tbsp lime juice

1 tsp white wine vinegar

1 tsp paprika

1 tsp ground cumin

1 tsp brown sugar

½ tsp salt

 

Salad

 

3 cups mixed salad greens

 

Divide the greens among the serving plates.

4 tbsp cilantro, chopped

 

Place in a large mixing bowl.

1 medium papaya, diced

2 red bell peppers, diced

1 avocado, diced

 

Place in a small bowl and mix, then add to the bowl with the papaya and peppers.

1 tbsp lime juice

 

Pour the dressing over the ingredients in the bowl and mix well. Divide the mixture and place it over the greens on the serving plates.

 

4 tbsp pumpkin seeds, roasted

 

Sprinkle over the salad, serve, and enjoy!

Helpful tips

This salad is best eaten right away, as both avocado and papaya don’t hold up well when left in the fridge for too long. I love eating this salad as a main meal, especially during the summer months, but it’s also a great accompaniment to dishes like Black Bean Quinoa Burgers or Burger Cups.
