Chipotle Aioli

This is my vegan take on restaurant-style aioli dip for sweet potato fries. I like it spicy, but the heat can obviously be adjusted to your preference by altering the amount of chipotle chili powder you use. You’ll likely retire ketchup when eating sweet potato fries after the first bite!

How it's made

⅓ cup vegan mayonnaise

 

Place in a small bowl and mix well. Chill for 30 minutes before serving (optional).

1 clove garlic, minced

1 green onion, thinly sliced

2 tbsp chipotle chilli pepper powder (adjust to taste)

1 tbsp lemon juice

Helpful tips

Store in the fridge, covered, for up to 2 days. The color might change a bit the second day, but after a quick stir it can be used again. This dip is great for dipping sweet potato fries, jazzing up baked potatoes, or as a spread for your favourite vegan burger such as Black Bean Quinoa Burgers.
